Our groves are in the hills above Florence at 300 meters above sea level. Their unique position ensures that they benefit from plentiful sunshine and cool breezes thanks to the elevation and the advantageous encounter of Mediterranean and Continental climates. Our groves survived the devastating 1985 frost, which nearly destroyed olive oil production in Tuscany. We are lucky to have great craggy hundred-year-old trees, a rare and beautiful sight in this area.
We are farming organically and are strongly committed to the environment in everything we do.Β Throughout the year, we tend our trees before picking in October. Producing quality olive oil is extremely labour-intensive, and multiple factors determine the quality of Extra Virgin Olive Oil.
Our grove contains four different varieties of olive trees (cultivars), and we harvest each at optimal ripeness. The timing of picking is crucial and changes from tree to tree. It affects the oil's organoleptic characteristics: the ratio of fruit and bitterness, spice and sweetness. The best time is at invaiatura, the moment in which the olives change colour from green to black. As a result, our harvest is staggered, logistically challenging and anything but cost-efficient.
The handling and harvesting of olives are critical, and every care is taken for a gentle, manual pick and to ensure pressing the same day of harvest. Our olives are pressed within hours of being on the tree. Only in this way can we minimise oxidation and limit the potential for deterioration of our precious and delicate fruit.

The shape recalls a Cuban rum bottle with a distinctive white capsule. It is packaged in a beautiful box made from recycled and recyclable cardboard. We implore you to store our oil in a dark, cool cabinet or pantry and never on a countertop or, worse still, next to a window or source of heat.
